    Reuben Sandwich with Homemade Corned Beef and Russian Dressing

    The time it takes for the beef to cure leaves for perfectly aged ceiling cheese 🧀 INGREDIENTS **Corned beef * 3 lbs Brisket * 8 cups water * 3/4 cup kosher salt * ½ cup sugar * 2 tsp curing salt * Peppercorn * Cloves * Ground ginger * Cardamon * Cinnamon stick * Bay leaves * Star anise ** Russian dressing * 1 tbsp diced onion * 3 tbsp Mayo * 1 tbsp Ketchup * 2 tsp Relish * 1 tsp Horseradish * Few dashes of Worcestershire * Salt and pepper ** Marble Rye bread * Sauerkraut * Swiss cheese DIRECTIONS 1. Mix your curing ingredients in a pot and bring to a boil then turn off the heat and let it cool all the way down. Put your brisket in a ziplock and pour the curing mixture into it. Put this in the fridge for 10 days. 2. After 10 days rinse your corned beef and put in a pot of water and set to high. Once it starts boiling, drop the heat to low and cover for about 3 hours. 3. Mix all the Russian dressing ingredients in a bowl. 4. Add some dressing to a piece of marble rye bread, followed by cheese beef, sauerkraut, more cheese, dressing and bread. 5. Get a pan on medium low heat, add butter and toast your sandwich.
